Sore Thighs & Delicious Soup

So yesterday morning my sis decided my mom & I were going to join her in a 6 week kettlebell program called KettleWorx...

I did this program a year ago and don't remember being this sore but just the thought of having to stand up after I'm done posting this is torture. I could barely lift my princess out of her crib this morning because my arms felt like jello and the worst part is =
WE HAVE TO DO IT AGAIN TOMORROW!
AHHHHHHHHH !!!!

The program consists of multiple discs but the 6 week program only uses 3:
Cardio
Resistance
Core

After doing these 20 minute workouts 3 times a week we can look like this:
Complete with bat tattoo...or bunny ears tattoo...or worm with ears tattoo...
whatever that creepy thing is.

Ummmmm....
Okay this may not be the best example of what you could see in the mirror after your 6 week routine, but you get the idea!

On to another topic...

I made the most DELICIOUS soup this weekend that even my hubby approved of.
It's pretty much impossible for me to give my husband a bowl of soup and call that dinner - he likes meat, potatoes, veggies, some bread, maybe a side salad and appetizers.
So when I told him I was making soup for dinner he didn't jump up and down in excitement.

BUT....
Then......
He tried a bite and couldn't stop !

It was SO yummy and I have been craving it since Friday night.

My sister Brittney found the recipe on Pinterest (so I won't take credit for the recipe) but I will pass it on to you guys and let you know that it is to die for!

It's perfect for a snowy night or just a chilly winter dinner idea.

I HIGHLY reccommend you make this ASAP and I guarantee you will want to eat it all!

Ingredients:
1 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup all purpose flour
16 oz pkg of Velveeta processed cheese cubed
1 1/2 cups milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
1/4 cup sour cream

1. Brown the ground beef in 3 quart saucepan. Drain and set aside.
2. In the same saucepan add 1 T butter and add onion, shredded carrots, parsley flakes, basil and celery. Saute until tender.
3. Add the broth, potatoes and beef and bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are tender.
4. In small skillet melt remaining butter (3 T) and add the flour. Cook and stir for 3-5 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low.
5. Stir in the cheese, milk, salt and pepper. Cook and stir until cheese melts. Remove from heat and blend in sour cream.
Yield 8 servings

My Skinnier Chicken Divan Recipe

I know there are many variations to this classic dish and everyone has their own style of making it, but this is the way I like to make it and there is never any leftovers!

The traditional style is usually full of many calories, but I like to call this my skinnier recipe :)

Chicken Divan... my way!

Ingredients:

2 cups shredded or diced cooked chicken
1 can Healthy Request cream of chicken soup
1/2 cup mayo ( I use Smart Balance mayo - see below for info)
1 bag of frozen broccoli
pinch of salt & pepper
1 cup reduced fat shredded cheddar cheese
1 splash of lemon juice
3 tablespoons melted butter
2 cups crushed cornflakes

I like to use the Smart Balance mayo because it is so much better for you!

BENEFITS

  • Light, delicious taste
  • Half the fat and 44% less calories compared to regular mayonnaise
  • Excellent source of ALA Omega from canola and flax oils (500mg per serving, 30% of the 1,600mg daily value)
  • No hydrogenated oils
  • No partially hydrogenated oils
  • 0g trans fat
  • 100mg of natural plant sterols per serving
  • Gluten-free
  •
    Now onto the recipe..............

First grease a 9x13 baking dish & layer the broccoli on the bottom

Next, layer the chicken on top of the broccoli

Mix the cream of chicken soup, mayo, salt & pepper, lemon juice, and cheese in a bowl

Spread the mixture over the chicken

Next is where you can be creative and top it off with whatever you want! Some ideas are breadcrumbs, croutons, french fried onions, or nothing at all...

I like to top mine with cornflakes to give it that extra crunch!

After crushing up the cornflakes, add the melted butter and sprinkle the mixture on top !

Bake at 350 for about 35 minutes...

I served mine on top of some brown rice and a side of butternut squash!

This is one of my favorites :)

    Chicken Stuffing Casserole

This is BY FAR the easiest dinner that can be thrown together in about 5 minutes and is sure to please! My husband always goes back for seconds and thinks I spent all day creating this amazing dish...little does he know, I threw it together about 10 minutes before he got home from work. Another reason I like this recipe is because I always have these ingredients on hand :)

    Chicken Stuffing Casserole

    Ingredients:

2 cups cooked chicken cut in cubes
1 pkg of your favorite stuffing
    Butter or margarine
1 can cream of chicken soup

and that's it! I told you it was easy!.........

I like to cook a few pounds of chicken breast in the beginning of the week and then freeze it so I will have it on hand for the week.

Next, cut the chicken into cubes and layer in a greased baking dish.

Now it's time to prepare your stuffing - any variety works and any additons make the dish even better such as cranberries, onions, or any other added extras you might like!

Next you layer the stuffing over the chicken.

Finally, spread the cream of chicken soup over the stuffing.

Bake at 350 for 25 - 30 minutes and voila! You have a quick and easy dinner that will please your entire family :) I like to pair mine with a side of broccoli, a sweet potato, or some butternut squash!

    yum :)
